Description
An easy and nutritious quiche that combines cottage cheese and fresh spinach for a delicious meal.

- 1 tbsp olive oil
- 1 onion, diced
- 1 bell pepper, optional
- 300 g fresh baby spinach
- 250 g cottage cheese
- 5 large eggs
- 150 g shredded cheddar cheese
- 100 ml milk
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 180°C.
- Heat the olive oil in a large skillet over medium heat and add the diced onion. Cook for about 3-4 minutes until soft.
- Add the bell pepper (if using) and sauté for another 2 minutes.
- Incorporate the fresh baby spinach into the skillet and stir until wilted, about 2-3 minutes. Remove from heat and allow to cool.
- In a large bowl, beat the eggs and mix in the cottage cheese and milk until smooth.
- Add the garlic powder, Italian seasoning, salt, and pepper to the egg mixture.
- Combine the cooled spinach and onion mixture with the egg mixture. Stir in the shredded cheese.
- Pour the mixture into a greased baking dish and smooth out the top.
- Bake for 30-35 minutes until golden brown and set.
- Let the quiche rest for 10 minutes before serving.
Notes
This quiche can be made in advance and stored in the refrigerator for up to 3 days.
