Description

An easy and nutritious quiche that combines cottage cheese and fresh spinach for a delicious meal.


Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 1 bell pepper, optional
  • 300 g fresh baby spinach
  • 250 g cottage cheese
  • 5 large eggs
  • 150 g shredded cheddar cheese
  • 100 ml milk
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 180°C.
  2. Heat the olive oil in a large skillet over medium heat and add the diced onion. Cook for about 3-4 minutes until soft.
  3. Add the bell pepper (if using) and sauté for another 2 minutes.
  4. Incorporate the fresh baby spinach into the skillet and stir until wilted, about 2-3 minutes. Remove from heat and allow to cool.
  5. In a large bowl, beat the eggs and mix in the cottage cheese and milk until smooth.
  6. Add the garlic powder, Italian seasoning, salt, and pepper to the egg mixture.
  7. Combine the cooled spinach and onion mixture with the egg mixture. Stir in the shredded cheese.
  8. Pour the mixture into a greased baking dish and smooth out the top.
  9. Bake for 30-35 minutes until golden brown and set.
  10. Let the quiche rest for 10 minutes before serving.

Notes

This quiche can be made in advance and stored in the refrigerator for up to 3 days.
