Instructions
- Peel and slice the sweet potatoes into approximately 1 cm thick rounds.
- Preheat the oven to 200 °C and line a baking sheet with parchment paper.
- Season the sweet potato rounds with olive oil, salt, and pepper.
- Roast the sweet potato rounds for 25-30 minutes or until tender and slightly golden, flipping halfway through.
- Crumble feta cheese over the hot rounds and drizzle with honey.
- Garnish with fresh herbs and serve immediately.
