Ingredients

- 400g potatoes (waxy)
- 200g feta cheese
- 1 small onion
- 2 eggs
- 100g flour (or gluten-free flour)
- Salt and pepper to taste
- Oil for frying
- 150g yogurt (preferably Greek)
- 1 cucumber
- 1 tbsp fresh dill
- 1 clove garlic
Instructions
- Peel and grate the potatoes. Squeeze out excess moisture using a kitchen towel.
- Finely chop the onion and mix it with the grated potatoes in a large bowl.
- Crumble the feta with a fork and add it to the mixture. Then add the eggs, flour, salt, and pepper.
- Heat oil in a deep pan over medium heat. Form small portions of the mixture and carefully place them in the hot oil. Fry until golden brown, about 3-4 minutes per side.
- Grate the cucumber and mix it in a bowl with the yogurt, chopped dill, and pressed garlic to prepare the sauce.
- Serve the warm fritters with the yogurt sauce on a plate. Enjoy!
Notes
Make the potato mixture in advance and let it rest in the fridge for more intense flavors. For a healthier option, bake the fritters in the oven instead of frying.
