- 900g skinless chicken breast fillets
- 30g Cajun seasoning
- 115g unsalted butter (cubed)
- 120ml chicken broth
- 120ml cream
- 15g cornstarch (mixed with 15ml cold water)
- 200g long-grain white rice (uncooked)
- 10g fresh parsley (finely chopped)
- 2g coarse black pepper
- 1g red pepper flakes
Instructions
- Prepare the chicken breasts by cutting them into evenly sized pieces for even cooking. Season the pieces generously with Cajun seasoning and coarse black pepper.
- Add the seasoned chicken pieces to the crockpot. Include the cubed butter and chicken broth.
- Cover the crockpot and let it cook on low for about 240-360 minutes or until the chicken is tender and easily pulls apart.
- About 30 minutes before the dish is done, add the cream. Stir gently to ensure even distribution.
- In a small bowl, mix the cornstarch with cold water and add it to the sauce after 15 minutes as a thickening agent. Stir well.
- Cook the rice according to package instructions in separate water and serve it hot on a plate, topped with the flavorful Cajun sauce and chicken.
- Garnish the finished dish with fresh parsley and a sprinkle of red pepper flakes for added color.
Notes
For a creamy texture, stir the mixture well when adding the cream to prevent curdling.
