- 2 lbs (900g) skinless chicken breast fillets
- 2 tablespoons (30g) Cajun seasoning
- 1/2 cup (115g) unsalted butter, cubed
- 1/2 cup (120ml) chicken broth
- 1/2 cup (120ml) heavy cream
- 1 tablespoon (15g) cornstarch mixed with 1 tablespoon (15ml) cold water
- 1 cup (200g) uncooked long-grain rice
- 2 tablespoons (10g) fresh parsley, chopped
- 1 teaspoon (2g) coarse black pepper
- 1/2 teaspoon (1g) red pepper flakes
Instructions
- Prepare the chicken breasts by cleaning them thoroughly and cutting them into even pieces.
- Season the chicken generously with the Cajun seasoning, ensuring each piece is well coated.
- Place the seasoned chicken pieces into the crockpot, and add the cubed butter and chicken broth.
- Set the crockpot to low and let it simmer for 4 to 6 hours.
- Add the heavy cream after cooking and stir well to combine everything.
- Mix the cornstarch with cold water in a bowl, then add this mixture to the crockpot. Stir well and let it simmer for another 30 minutes until slightly thickened.
- Cook the long-grain rice according to package instructions and serve it as the base for the creamy chicken.
- Serve the Cajun butter chicken over the rice and garnish with fresh parsley for a lovely color contrast.
