Description

Delicious garlic-herb glazed medallions made from tender beef or pork, slow-cooked to perfection.


Ingredients

  • 2 lbs beef/pork tenderloin (cut into 1.5-inch thick medallions)
  • 1/4 cup brown sugar (packed)
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon balsamic vinegar
  • 68 whole garlic cloves, peeled
  • 2 fresh rosemary sprigs
  • 1 tablespoon olive oil (for searing)
  • Salt and black pepper to taste

Instructions

  1. Pat the medallions dry and season generously with salt and pepper.
  2. Heat the olive oil in a large pan over high heat and sear the medallions for 1-2 minutes on each side.
  3. Arrange the seared medallions in an overlapping pattern in the slow cooker.
  4. Scatter the whole peeled garlic cloves and fresh rosemary sprigs around the meat.
  5. Mix the brown sugar, soy sauce, and balsamic vinegar in a small bowl and pour over the medallions.
  6. Cover and cook on low for 3 to 4 hours, checking for tenderness after 3 hours.
  7. Serve the tender medallions and spoon the sweet-savory garlic sauce over them.

Notes

These medallions are perfect for meal prep! You can marinate the meat overnight for enhanced flavor.
