Description
A delicious and aromatic Halloumi Tikka Masala featuring crispy Halloumi cubes in a rich tomato and spice sauce, perfect for any occasion.
Ingredients

- 400 g Halloumi, cut into 2 cm cubes
- 1 red bell pepper, cut into 2 cm pieces
- 1 yellow bell pepper, cut into 2 cm pieces
- 1 red onion, cut into 2 cm pieces
- 2 tbsp olive oil
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1/4 tsp chili powder (optional)
- Salt and pepper to taste
- 2 tbsp olive oil or ghee
- 1 large onion, finely chopped
- 2 cloves garlic, finely chopped
- 2 cm piece of ginger, grated
- 1 red chili, finely chopped (optional)
- 1 can (400 g) chopped tomatoes
- 2 tbsp tomato paste
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp turmeric
- 1/4 tsp paprika (sweet)
- Pinch of sugar
- 200 ml coconut milk (or cream)
- 100 ml vegetable broth (or water)
- Juice of 1/2 lemon
- Fresh coriander, chopped, for garnish
- Salt and pepper to taste
- Basmati rice or naan bread for serving
Instructions
- Prepare the Halloumi and vegetables by cutting them into even pieces.
- Mix olive oil, garam masala, turmeric, chili powder, salt, and pepper in a large bowl to make the marinade.
- Coat the Halloumi and vegetables in the marinade and let them sit for at least 15 minutes.
- Skewer the Halloumi and vegetables onto wooden skewers for grilling.
- Heat olive oil or ghee in a heavy pot and sauté the finely chopped onion until golden brown.
- Add garlic, ginger, and optional chili, sautéing for about one minute.
- Incorporate chopped tomatoes and tomato paste, bringing the mixture to a boil.
- Stir in garam masala, coriander powder, cumin powder, turmeric, paprika, and sugar, then reduce heat and simmer for 10 minutes.
- Pour in coconut milk and vegetable broth, simmering for an additional 5-10 minutes until thickened.
- Stir in the lemon juice for a fresh finish.
- Grill the skewers for about 2-3 minutes on each side until golden brown.
- Combine the grilled skewer in the Tikka Masala sauce and serve.
- Serve with basmati rice or naan, garnishing with fresh coriander.
Notes
Marinate the Halloumi overnight for a more intense flavor. If you don’t have a grill, an air fryer or oven can be used.
