Description

A delicious and aromatic Halloumi Tikka Masala featuring crispy Halloumi cubes in a rich tomato and spice sauce, perfect for any occasion.


Ingredients

  • 400 g Halloumi, cut into 2 cm cubes
  • 1 red bell pepper, cut into 2 cm pieces
  • 1 yellow bell pepper, cut into 2 cm pieces
  • 1 red onion, cut into 2 cm pieces
  • 2 tbsp olive oil
  • 1 tsp garam masala
  • 1/2 tsp turmeric
  • 1/4 tsp chili powder (optional)
  • Salt and pepper to taste
  • 2 tbsp olive oil or ghee
  • 1 large onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 cm piece of ginger, grated
  • 1 red chili, finely chopped (optional)
  • 1 can (400 g) chopped tomatoes
  • 2 tbsp tomato paste
  • 1 tsp garam masala
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp turmeric
  • 1/4 tsp paprika (sweet)
  • Pinch of sugar
  • 200 ml coconut milk (or cream)
  • 100 ml vegetable broth (or water)
  • Juice of 1/2 lemon
  • Fresh coriander, chopped, for garnish
  • Salt and pepper to taste
  • Basmati rice or naan bread for serving

Instructions

  1. Prepare the Halloumi and vegetables by cutting them into even pieces.
  2. Mix olive oil, garam masala, turmeric, chili powder, salt, and pepper in a large bowl to make the marinade.
  3. Coat the Halloumi and vegetables in the marinade and let them sit for at least 15 minutes.
  4. Skewer the Halloumi and vegetables onto wooden skewers for grilling.
  5. Heat olive oil or ghee in a heavy pot and sauté the finely chopped onion until golden brown.
  6. Add garlic, ginger, and optional chili, sautéing for about one minute.
  7. Incorporate chopped tomatoes and tomato paste, bringing the mixture to a boil.
  8. Stir in garam masala, coriander powder, cumin powder, turmeric, paprika, and sugar, then reduce heat and simmer for 10 minutes.
  9. Pour in coconut milk and vegetable broth, simmering for an additional 5-10 minutes until thickened.
  10. Stir in the lemon juice for a fresh finish.
  11. Grill the skewers for about 2-3 minutes on each side until golden brown.
  12. Combine the grilled skewer in the Tikka Masala sauce and serve.
  13. Serve with basmati rice or naan, garnishing with fresh coriander.

Notes

Marinate the Halloumi overnight for a more intense flavor. If you don’t have a grill, an air fryer or oven can be used.
