Mujadara is a comforting dish made of lentils and rice, topped with caramelized onions, offering a warm and flavorful culinary experience.

- 1 cup green or brown lentils
- 1 cup long-grain rice
- 2 large onions, sliced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Water, as needed
Instructions
- Rinse the lentils under cold water, then place them in a large pot with fresh water. Bring to a boil and let simmer for about 15 minutes until soft, but not mushy. Drain and set aside.
- Bring a similar amount of water with a dash of olive oil to a boil in the same pot. Stir in the rice and cook over medium heat for about 18 minutes until the water is absorbed. Fluff with a fork and mix in the lentils.
- Heat olive oil in a large pan, add sliced onions, and sauté over medium heat until they are golden brown and caramelized, about 15 minutes. Stir frequently to avoid burning.
- Combine the caramelized onions with the lentil-rice mixture. Add cumin, coriander, salt, and pepper, and stir well to combine.
- Serve the Mujadara hot, garnished with remaining caramelized onions and enjoy with lemon juice or a yogurt dip.
Notes
Make sure to check the lentils’ cooking time to avoid them becoming mushy. Also, use high-quality olive oil for the best flavor.
