- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup sugar substitute
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 175°C (350°F) and grease a baking pan.
- Mix the grated zucchini, sugar substitute, vegetable oil, eggs, and vanilla extract in a large bowl.
- Combine the flour, cocoa powder, baking soda, baking powder, and salt in a separate bowl.
- Add the dry ingredients to the wet ingredients gradually and stir until just combined.
- If desired, fold in the chocolate chips.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool before cutting into squares and serving.
Notes
Be careful not to overmix the batter to maintain the brownies’ moist texture. You can freeze extra brownies for later.
